Torta di Ricotta

Torta di Ricotta (Ricotta cheesecake) is one of the easiest and most delicious desserts to make. I love this recipe’s simplicity.  You can make it even easier by using a pre-made pie crust.

Torta di Ricotta


  • For crust:
  • 2 cups crushed graham crackers
  • 1/2 cup melted butter
  • 2 Tbs sugar (optional-it helps the crust stick together, however I have had success without using the added sugar)
  • For filling:
  • 15 oz. whole milk ricotta cheese
  • 1/2 cup sugar
  • 1 lemon zest
  • 1 egg


  1. In a medium size mixing bowl mix crushed graham cracker crumbs with melted butter and sugar.
  2. In a 9" pie dish, press crumb mixture evenly across the bottom with hands. Crust should be about 1/4 inch high. Once the bottom is covered spread remaining crumbs around the side of dish (about 1/2 inch high) and pat smooth.
  3. Bake at 300 degrees for 25 minutes and let cool completely.
  4. Filling:
  5. Mix all ingredients together and pour onto pie crust, spread evenly.
  6. Bake at 350 degrees for approximately 30-40 minutes.
  7. Let cool and garnish with berries before serving.
  8. Enjoy!
